People, I am in a good mood today for no reason in particular. Maybe it’s the three consecutive days of televised preseason football, one of which featured a Vikings defeat, and a fourth game coming tonight. Maybe it’s the best-yet version of breakfast quinoa I made this morning with almond milk. Maybe it’s the perfect rainy August day, preventing a morning run and condoning day-long sedentary activities. Maybe it’s constantly laughing at the mental replay of the Spokane coach’s “punks jump up to get beat down” pep talk before the arena bowl. It could be any or all of these things, or something else entirely. But really, good days need no explanation. They’re just good.

So in the spirit of this good day, I give you the following recipes which will also make your day. They’re all amazing and I suggest you try them as soon as possible. The sooner the better!

Let’s begin with the Tomato Feta Tart.

Aaaaaaaaaaaaaaaaaaaah.

This little baby was found in this month’s Everyday Food. It’s actually supposed to be a Tomato and Goat Cheese Tart, but we didn’t have any goat cheese, so the Tomato Feta Tart was born. The recipe isn’t up on the Everyday Food website yet, but this one from Real Simple is pretty much identical.

Moving right along: another winner from Everyday Food, the Nectarine Upside Down Cake.

Oh, yes.

That’s what I’m talking about.

Yet again, you’ll have to wait for a bit for this one to show up online, but for now here’s a comparable recipe from Earthbound Farm. Side note: We substituted apple sauce for butter and did a half whole wheat, half regular flour mix. We’re healthy like that…you know, when we’re planning on eating 7-8 slices of cake.

Remember the healthy banana muffins? Well, we just hijacked that recipe and made healthy nectarine blueberry muffins. Necessity, and extra produce, is the mother of invention.
